MCT2D Makes: Cauliflower Mac and Cheese (with video)

Adapted from Delish's Keto Mac & Cheese, this savory low carb favorite works as a hidden veggie side or a vegetarian main. It is sure to satisfy a crowd, and as a side, serves 8.

- Oven
- Baking sheet

- Cheese grater
- 2 medium heads Cauliflower
- Olive Oil
- 1 cup Almond Milk
- 6 oz Cream Cheese
- 4 cups Shredded Cheddar Cheese
- 2 cups Shredded Mozzarella Cheese
- 1 tbsp Hot Sauce
- Black Pepper
Toppings
- ½ cup Walnuts, chopped
- ¼ cup Parmesan Cheese
- 2 tbsp Olive Oil
- Parsley, chopped to garnish
Preheat oven to 375 degrees farenheit.
Roast the Cauliflower.
Roughly chop cauliflower into chunks and place on a large baking sheet.
Drizzle with olive oil and mix to coat evenly.
Bake at 375 degrees for 30 minutes.
Make Cheese Sauce.
In a large pot, heat almond milk, cheddar cheese and mozzarella cheese together.
Stir on low heat to gently melt the cheese.
Combine and bake
Once all the cheese has melted, add in cauliflower chunks to the sauce and stir to combine. Add desired amount of black pepper.
In a small bowl, combine the ingredients for the topping.
Place cauliflower and cheese mixture into a casserole dish.
Sprinkle with topping.
Bake at 375 degrees for 15 minutes.
Garnish with chopped parsley and serve.
