Cauliflower Mac and Cheese (with video)

Adapted from Delish's Keto Mac & Cheese, this savory low carb favorite works as a hidden veggie side or a vegetarian main. It is sure to satisfy a crowd, and as a side, serves 8.

Ingredients
  

  • 2 medium heads Cauliflower
  • Olive Oil
  • 1 cup Almond Milk
  • 6 oz Cream Cheese
  • 4 cups Shredded Cheddar Cheese
  • 2 cups Shredded Mozzarella Cheese
  • 1 tbsp Hot Sauce
  • Black Pepper

Toppings

  • ½ cup Walnuts, chopped
  • ¼ cup Parmesan Cheese
  • 2 tbsp Olive Oil
  • Parsley, chopped to garnish

Instructions
 

  • Preheat oven to 375 degrees farenheit.

Roast the Cauliflower.

  • Roughly chop cauliflower into chunks and place on a large baking sheet.
  • Drizzle with olive oil and mix to coat evenly.
  • Bake at 375 degrees for 30 minutes.

Make Cheese Sauce.

  • In a large pot, heat almond milk, cheddar cheese and mozzarella cheese together.
  • Stir on low heat to gently melt the cheese.

Combine and bake

  • Once all the cheese has melted, add in cauliflower chunks to the sauce and stir to combine. Add desired amount of black pepper.
  • In a small bowl, combine the ingredients for the topping.
  • Place cauliflower and cheese mixture into a casserole dish.
  • Sprinkle with topping.
  • Bake at 375 degrees for 15 minutes.
  • Garnish with chopped parsley and serve.
